Now Serving Omaha: Veg.Edible

New to the Benson neighborhood, Veg.Edible welcomes everyone to enjoy its sweet and savory menu regardless of allergies or dietary preferences.

New in the heart of Omaha's Benson neighborhood sits Veg.Edible, a fast casual take-out eatery and bakery offering gluten-free, nut-free and soy-free options.

Veg.Edible encourages people to embrace the flavors of plant-based food. Owner Stacie Van Cleave said she started Veg.Edible to spread awareness about allergen-friendly options and the importance of safe food handling.

"You don't have to be vegan or have celiac disease to enjoy our food, it is food for everyone and it's very good," said Van Cleave.

Options at Veg.Edible include the Veg Head Nachos featuring a choice of soy curl beef, soy curl chick'n, plant-based shrimp, or Beyond Meat, and the Matty Melt, a Beyond burger smashes with onions, cheddar, sauerkraut and "Matt Sauce."

Veg.Edible makes baked goods ranging from avocado brownies to oatmeal cream pies. They also take cake orders that are 100% vegan, gluten-free, soy-free and nut-free.

"I did not have plans to bake and people kept asking for cakes and cookies so I figured it out and figured it out really well," said Van Cleave.
