I'm Stacie — owner + chef at Veg.Edible. Every single thing my partner Matt and I create is vegan, gluten-free and nut-free (contains coconut) with soy-free options marked. We believe that everyone should be able to enjoy fresh, flavorful food regardless of allergies or dietary preferences.

Where are you located?

Our production space is called Kitchen Council and is located on the 2nd floor inside the Hoff Family Art & Culture Center. This space serves as a pick up location for scheduled pop ups and special orders. 

Our production space is not open to the public.

Dine in for scheduled pop ups is available at McCormick's 1894, a beautiful cocktail bar on the first floor of the Hoff Family Art & Culture Center.

Do you offer pick up or delivery?

YES!

Free pick up is available at our production space, Kitchen Council or you can meet me in the Natural Grocers Dodge parking lot.

Delivery is available to any Omaha address +$8 or suburb address +$10

(Bellevue, Ralston, Papillion, Gretna, La Vista, Ralston, Bennington, Council Bluffs)

How do you accommodate for allergies?

All ingredients used to make up our menus are gluten-free. 

Whether that be naturally gluten-free or certified gluten-free, I triple check all labels + contact manufacturers if needed to ensure there is no gluten present. All of the ingredients used can be found here. 

I rent a spacious, very clean, modern commercial kitchen called Kitchen Council in Council Bluffs. Even though this space is shared, I have purchased new, dedicated small wares and some equipment (cutting boards, cambros, small wares, fryer, griddle) that is washed/sanitized separately from any other dishes. I do not share sponges or towels. My supplies are NOT shared with anyone else and are stored in dedicated areas on shelves up high that I’ve chosen to avoid any accidental contamination. 


100% vegan means 100% vegan. As a vegan myself, I would never serve anything I personally wouldn't eat. I do not consume or serve anything containing milk, whey, lactose, gelatin, casein, carmine, eggs, fish, shellfish, poultry, beef, honey, vitamin D3, shellac or any other animal derivative. My sugars are not processed with bone char.

We do use coconut in most recipes and sesame in our kitchen space.We do not use any peanuts or tree nuts including almonds, Brazil nuts, cashews, hazelnuts, pecans, pistachios, walnuts. If an item is marked "may contain nuts" I do not buy it. We cater to gluten-free, vegan and nut-free diets with some soy-free options.

Not everything is soy-free! Meals are marked soy-free and ingredients for everything can be found here. ALL of our baked goods are soy-free! Our dedicated fryer has a completely separate basket that is dedicated soy-free. We use canola oil only (does not contain soy bean). Although legumes aren't technically soy, they can still trigger reactions for those with soy allergies. Any item labeled "soy-free" does not contain legumes.

We cater to gluten-free, vegan and nut-free eating with some soy-free options. Veg.Edible is not legally deemed a completely dedicated facility but we have the ability to accommodate for many allergies and intolerances.
