Hi hello! I'm Stacie — owner + chef at Veg.Edible. Every single thing I create is vegan, gluten-free and nut-free (contains coconut) with soy-free options marked. I believe that everyone should be able to enjoy fresh, flavorful food regardless of allergies or dietary preferences. You deserve to know what is in your food.
Our mission is to encourage everyone to embrace the flavors of plant-based food — whether you've been vegan since the 90's or you're plant-curious, our food is scratch-made with high quality ingredients and inclusive intention.
You won't find allergen friendly food this satisfying anywhere else.
I chose to go vegan in December of 2017 on a flight back from San Diego. My boyfriend at the time had gone vegan about 6 months prior to this trip and I thought it was the weirdest thing. I accidentally ate vegan the whole time we were in San Diego and loved it! On the flight home, I watched “What the Health” which is a documentary directed by Kip Anderson - same director of Cowspiracy and Seaspiracy which I highly recommend watching. These documentaries are about the link between diet, disease, dollars and everything in between they don’t want the general public to know. I was intrigued by a story in this documentary from a woman with chronic asthma. She was on 18 different medications just to be able to breathe and by changing her diet to a plant based diet it allowed her to heal and get off most of her medication. This hit home with me since I was diagnosed with chronic asthma in 6th grade. I was taking 4 different costly medications for my asthma at the time without health insurance. Initially I went vegan for my health but quickly learned about the treatment of animals, especially in factory farming and the impact it has on the earth.
I am vegan for my health, for the animals, for the planet and for our future.
